Eliana's Grape Pie

1 1/2 lbs (4 cups) of concord grapes
1 cup sugar
1/4 cup all purpose flour
1/4 tsp salt
1 Tbs lemon juice
1 1/2 Tbs butter, melted
1 9" unbaked pie shell
crumb topping, lattice or pie shell

Remove pulp from skins, reserving skins. Cook pulp just enough to release seeds. Press through colander, separating and removing seeds. Combine all remaining ingredients, skins, pulp, sugar, etc. Let this mixture stand for 15 minutes.
Fill pie shell with mixture. Bake at 450 degrees for 10 minutes. Then reduce temperature to 350 degrees and bake for an additional 20 minutes.


Spaghetti alla Carbonara

Ingredients for 3 servings:

8 oz. of Spaghetti noodles
3 eggs
Salt and Pepper
1 Cup of fresh cream
3.5 oz. of cubed bacon (pancetta bacon if possible)
3 oz. of Parmesan cheese (fresh cheese works best)

Lightly fry the bacon in a pan. In a bowl, beat the eggs, adding salt and pepper to taste. (More pepper than salt) Combine the cheese and the cream. Mix well. Drain the Spaghetti noodles and put them back into the casserole; pour the bacon and the egg mixture over the spaghetti and stir well for a couple of minutes, until the eggs are lightly cooked. Serve hot. Buon Appetito!
